BEST QUINOA WITH VEGGIES RECIPE

I am back with this DELICIOUS quinoa with veggies recipe!
Yesterday was the first time I tried it, and I was amazed at how delicious it is. All I did was: open my fridge, see what’s in there, and start cooking! Some tomatoes, zucchini, lots of onions, some quinoa… Let’s see what we can make out of these. 🙂
I have asked you on an Instagram poll if you would like to find out my quinoa with veggies recipe. And I was pleasantly surprised that so many of you (86%, to be precise) have voted for YES!

Quinoa with veggies recipe (6 servings)

 
  • Add coconut oil to a pan, let it heat up
  • Chop 1 zucchini and add it to the pan
  • Chop 1 red onion and 2 white onions and add them to the pan
  • Let them cook until the desired texture is achieved
For the sauce:
  • Add coconut oil to a pan, let it heat up
  • Chop 6 tomatoes and add them to the pan
  • Chop 3 red (kapia) peppers and add them to the pan
  • Let them cook until they are soft and juicy
  • Allow them to cool down a bit and add them to a blender
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • Add 3 garlic cloves
  • 1 tbsp powdered basil
  • a pinch of cumin (a third of a teaspoon)
  • blend everything – and have a taste of happiness (seriously, taste it)
  • Mix the sauce with the quinoa and with the zucchinis and onions
  • Enjoy!
